I also used the teriyaki sauce for an alternative of the Katsuobushi sauce which is also a traditional Japanese cooking sauce that mainly made from tuna fish. But I don’t get that sauce at home, so I used an alternative. I believe you can also by the Katsuobushi sauce from most Japanese grocery shops.

For the beef, go and buy the freezed beef pieces for hotpot at Asian grocery shops. Those beef rolls are cut by machine so that they are tender and thinner. Most Japanese restaurants use the hotpot beef pieces to make the Guydon. And of course you can also buy beef from local market, and cut into small and thin pieces. But I don’t think human hands can do a better job for this case.

The ingredients of this dish are quite simple and direct. You only need all those seasonings and sauces I mentioned above, and moreover the onions. Onion is a very significant ingredient for this dish, as it is the perfect match with beef. You cannot use garlics or spring onions as an alternative, as they all give quite different tastes. You just simply cut the onions into slices, and there’s no need to cut it into small chunks. And for the aspect of representation, slices are better than chunks.

This dish also requires the good quality of rice. You can simply buy Japanese rice (no need to be sushi rice quality), and that gives you the best taste. Thai long grain rice is not the best for this dish, as it tastes harder than Japanese short grain rice.

I also made a side dish for the Guydon, that is the fried fish fillets. It is very simple, just cut the fish fillet into chunks (the size doesn’t matter a lot, it’s all depends on your personal preference); and wrap the chunks with plain flour, egg white, and breadcrumbs (it’s better to follow the order with plain flour first, and then egg white, and lastly breadcrumbs); and then fry them until crunchy and brown. Topping for this side dish, I used Thai style sweet chilli sauce; but some of you might prefer tomato sauce or other kind of sauces.

Guydon

For 1 serving

Ingredients:

  • 250g beef slices (hotpot beef rolls)
  • 1 onion (cut into slices)
  • 2 tbs Mirin
  • 1 tbs soy sauce
  • 1 tbs teriyaki sauce
  • 1 tsp oyster sauce
  • 1 tsp dark vinegar
  • 1 tsp white sugar

Instructions:

  1. Get some rice ready for serving
  2. Heat some oil in the fry pan
  3. Add beef slices, fry them until fully cooked (let all the blood being steamed out)
  4. Add onion, mix well
  5. Add soy sauce, Mirin, oyster sauce, teriyaki sauce, dark vinegar and sugar, gently mix together
  6. Keep frying until all the ingredients are mixed well
  7. Put rice into the serving bowl/plate, and put the beef mixture right on the top of the rice and let the sauce mixes with the rice
  8. Topping with some white sesame seeds
  9. And side with fried fish fillets or some green salad. Most Japanese restaurants use Miso soup as a side dish for Guydon, and you can feel free to have a try!

This dish is also perfect to put into the lunch box with a beautiful presentation. It is a lunch meal! ☺️
